I will not read this book, which is big and boring, but I will read another one. – Запятыми выделяется, так как не важная часть. Which ставится также потому что эта часть предложения не важная и её можно вычеркнуть без ущерба для смысла предложения.

My friend said that I was right. – Запятые с that не ставятся, в том числе в конструкциях said that и т.п. That ставится, так как конструкция said that.

Bring me only the flower that is red and beautiful. – Запятыми часть предложения с that не выделяется никогда. That ставится, так как информация важна – нужен конкретный цветок.

I am trying to find your only key, which you lost yesterday. – Запятая ставится, так как информация дополнительная, не важная. Which – также потому что информация не важная, а как дополнительная характеристика ключа.
